Con el pasar de los días, fui
yo el que terminó por enseñar a otros. Los compañeros valoraban mi capacidad de
esfuerzo y mi habilidad en el puesto. After time, I became to teach
others. My workmates appreciated my effort capability and the way I managed the
back post.
Estaba
mejorando en el trabajo. I was
growing into the job
Gracias a que mi puesto
estaba bastante cerca del espacio que ocupaba la cocina, tuve la oportunidad de
aprender más sobre la cocina india y también sobre las necesidades del conjunto
de compañeros. Because of my
post was so close to kitchen, I could learn more about cooking, also about the
communal needs of workmates.
Recuerdo que un día recibí
varias quejas por parte de Akeel, los dos nuevos compañeros no le trataban con
el debido respeto. Al principio pasé del
tema; le contesté que eso no dependía de mí, pero tras reprocharme de nuevo su
conducta decidí tomar cartas en el asunto.
I can remember how Akeel was making a complaint about the way the two
last newcomers were giving him, without the due respect. At the first time I
did not pay attention on his words, I answered him that it was something what
was not depending on me, but after this, having understood the situation, I made
the decision of notify it to those colleagues.
Me acerqué a ellos y les hice
enfrentar la situación, exponiendo varios puntos, pidiéndoles que por favor
trataran de una forma más educada y amable al resto de la plantilla. I went to them and I made them to face
the true, showing them my own view on the issue, inviting them to treat people
in a proper way, kindly and politely, as all they had merited.
Les expliqué que había varios
motivos para ello. El primero; el simple interés, ser cortés con tu vecino,
porque nuestro puesto estaba a medio camino entre la gente de la cocina y los
responsables de la sala; o sea; la importancia de mantener una buena relación
de vecindad, por conveniencia, trabajar en equipo ahorra tiempo y esfuerzo. I
explained them that there were several reasons to do it. The first one, the
simple interest, being polite with your neighbor, because his post was in the
mid way between the kitchen staff and the floor managers; I mean, the
importance of maintaining a good neighboring relationship; just to live
together, working in team can save time and work.
El segundo, que la mayor
parte del tiempo nuestro compañero lo pasaba metido entre cazuelas, trabajando
más horas que nadie, lo que; como poco, se merecía nuestro respeto. The
second one, was that the most part of the time our mate was working with pans
and casseroles, spending more hours than nobody; what, at least, in my personal
view, was something to be respected.
¿Sabéis a qué me refiero? ¿Entendéis a dónde quiero ir a parar? Do you
know what I mean? Where do we go
from here?
En mi mente, el recuerdo
impreso de las manos de Akeel, con la piel tan húmeda que parecía de trapo,
porque él, como ningún otro, sabía muy bien lo que suponía dejarse la piel en el trabajo –literalmente -. On my
mind, I always had the tatoo memory of Akeel ´s hands, with the skin so damp as
a wet cloth, burst into sweat, because he, more than no one, was very concerned
about the meaning of leaving the skin on the job – literally, as we use to say
in Spain -.
Quizá debí haberles mostrado
aquella parte de la realidad del trabajo para despertar su sensibilidad y
concienciarles de la importancia de las tareas que desempeñaban el resto de
compañeros… It might be possible that, If I had showed them that
part of the job to wake up their sensitivity to the weight of the rest of tasks
developed by the rest of the staff…
Entonces, me vino de nuevo a
la cabeza la frase de Abraham… That reminded me Abraham´s words…
Respeto: ofrécelo, recíbelo

Creo que con eso bastó. I considered that was fair enough.
Todavía tardarían un tiempo
en ser conscientes de la importancia del trabajo en equipo, de la importancia
de todos y cada uno de los eslabones que conforman esa cadena, de la que en
última instancia; el propio cliente, consciente o no, también forma parte; la
importancia de que todo estuviera en su sitio; la disposición de las sillas, la
vajilla, la cubertería, las servilletas… It took a time to
them to become aware of the advantages of working in team; of the importance of
each and every one of the steels of that chain, whose the own client, conscious
or not, was belonging to also.
Todo era importante; la
calidad y celeridad del servicio, evitando esperas innecesarias a los clientes,
explicando; llegando el caso las peculiaridades del menú, el trabajo en la
barra del bar, el trabajo en cocina, el trabajo en el back; la presentación y
preparación de las tablas, el facilitar el trabajo de los camareros, el servir
de puente con la cocina, el secar bien los platos, el llenar hasta el justo
nivel las jarras y botellas de agua, el mantener las bebidas frescas… - La
comida india; en general, es muy picante, de ahí que el agua sea tan necesaria
y demandada por los clientes; y de ahí también la forma de comer, con la boca
abierta, para permitir que entre el aire y la refresque; lo mismo que con el
té, esos sorbos tan sonoros permiten rebajar su temperatura antes de rozar
siquiera los labios… -. Everything was important, the quality
and swiftness of the waiter´s service, avoiding boring waits, explaining, if it
was necessary, the menu secrets, the work on the bar, the kitchen work, the
back work, the making up of the tables, how to make easier the waiter´s tasks,
how to bridge the floor and the kitchen, how to well dry the set of dishes, how
to fill the precise level the water jars, how to maintain the fridge cold… - In
general, Indian food is very spicy, and for this reason, water is so necessary
and apply for clients, and this is also the main reason why you have to eat in
that way so far the European one, with your mouth opened, to allow the air to
bring in its cavity, refreshing it, and it is exactly the some way to drink the
hot tea, taking air to reduce its temperature before it browse the skin of your
lips…

Comprobaba que todos los
cacharros y demás utensilios de cocina estuvieran en su sitio; boles, vasos,
vajilla (cucharas, tenedores, cuchillos…), platos (grandes, pequeños),
abridores de latas y corchos, papel antigrasa, cestillos para el pan, pajitas
de plástico, bolsas de plástico, bolsas azules de algodón para guarder la ropa
sucia, tapas, pulverizadores, saleros, pimenteros… I had to check
that all the implements and the rest
of the cooking utensils were on the
correct place; bowls, glasses, cutlery
(spoons, forks, knives…), plates (small, big), tin openers, corkscrews,
greaseproof paper sheets, wicker baskets, plastic straw-sticks, , black plastic
bags, blue cotton bags, tappers, spray (water + fairy), salt, pepper…
Limpio, ordenado; el puesto
estaba listo para comenzar al día siguiente. Clean, tidy; everything was ready to begin the next day.
Por último, sólo restaba
desconectar las máquinas y apagar las
luces, quedando sólo las de emergencia. Hora de cerrar. For ending, the last thing was unplugging the machines
switch off the lights, leaving only the emergency ones. Closing time.

Vuelta a casa; pero
antes, mi pequeño premio, parada en el
badulaque para saludar a mis amigos, para conversar con T. Time for
going back home, but previously, my small daily reward, stopping at the grocery
to share good times talking with friends, to talk with T.

Nunca olvidaré aquella
primera paga… I won´t forget that
first wage…
Abraham me había contratado
para trabajar como camarero en el back. Un turno podía durar entre 4 y 12
horas, llegando excepcionalmente a 16; dependiendo de la carga de trabajo. Abraham
had engaged me to manage the back. One shift could take around 4 and 12 hours,
16 exceptionally (double shift), as required, depending on the day.
A veces, desde la mañana a la
tarde, o también, en otras ocasiones desde mediodía hasta medianoche;
normalmente hasta muy tarde, hasta bien entrada la noche. Sometimes from the Morning, or from Noon
to Midnight, usually till later.
Los fines de semana y los
días festivos, coincidiendo con las vacaciones, eran los de mayor ajetreo, por
lo que siempre me tocaba trabajar. Weekends and holidays were very
busy days, because of these I use to have my day off on Mondays, more quiet.
….
De normal, procuraba llevar
conmigo cada una de las lecciones aprendidas en el día; aunque no fueran
incluidas en mi salario -, y la única forma que tenía, era anotarlas en el
dorso de aquellas páginas del libro. Usually I used to take with me
each one of the learned leasons of the day, even though this were not included
into my salary, and the only way I could do it was writing down them onto the
backpage of my pocket book.
Después de todo; nunca tuve
tiempo para aburrirme, en buena medida, gracias a mis compañeros. After all, I can say I never had time to
get bored, thanks of my workmates trust.
