El mostrador donde pasaba la mayor parte de las
horas de trabajo; quedaba oculto a la sala, separado de la cocina por una
puerta de madera con ventanas en forma de ojos de buey, para evitar choques
entre los camareros que van a servir y los que vienen de servir. Era un espacio
diminuto, lo justo para que cupiera una alacena para la vajilla y una
estantería donde dejar a mano los saleros, los pimenteros, las cucharas, un par
de paquetes de papel de estraza y algunas servilletas de tela listas para usar.
The service counter where I
used to spend the most part of my work-time; was behind the lounge, separated
from the kitchen by a wood door with a porthole window, to avoid collision between
the waiters who go to the client table and who come back from there. It was a tiny
space, the right space (enough) for keeping the service set of dishes and a
couple of shelves for leaving the salt, the pepperbox, the tea spoons, a couple
of greaseproof - paper packets and some cloth napkins ready to be used.
Todo el equipo pasaba por
allí, entre otros motivos; porque la alineación
de cada jornada, escrita a mano sobre una hoja de papel, se dejaba allí, en la
corchera de la pared. Everybody
was moving around there, for several reasons, for instance, because the team of
each working day, written by hand on a paper sheet, was leaving there, onto the
wall corkboard.
Aquella puerta tan pesada; aunque
cerrada, nunca fue una barrera para
nosotros. That heavy door,
although closed, never was a border for us, for keeping our relationship.
Al otro lado, lejos de la
vista y la mirada del público, con Akeel, estaban Kahn y el resto del equipo de
cocina. Sabía que estaban ahí, porque siempre estuvieron allí, apoyándome,
compartiendo sus historias del día a día, en un país donde la lluvia caía de un
modo bien distinto al que lo hacía en el de uno. On the other side, far away from public, with Akeel,
were Kahn and the rest of the kitchen staff. I always knew they were there,
because they always were there when I need them, supporting me, sharing their
daily life with me, in a country where the rain used to fall in a way strongly
different from the way it used to do on mine.
